Disney's Chef Art Smith's Homecoming Macaroni and Cheese Recipe

Ingredients
  • 1 pound Penne Pasta or Elbow Macaroni
  • 4 tablespoons unsalted Butter + extra for buttering casserole dish
  • 1/3 cup All-Purpose Flour
  • 4 cups Milk, heated
  • 2 cups shredded Extra-Sharp Cheddar Cheese, divided
  • 2 cups finely chopped American Cheese, divided  
  • Salt and freshly ground Black Pepper, to taste
  • Hot Sauce, of choice, to taste
  • 1/4 cup freshly grated Parmesan Cheese
Instructions
  1. Prepare pasta according to package directions. Drain. Set aside.
  2. Position a rack in the center of the oven.
  3. Preheat oven to 350°F.
  4. Butter a deep, 4-quart casserole.
  5. Place butter in a medium saucepan. Place pan over medium heat.
  6. When butter has melted and is hot (do not burn), whisk in the flour.
  7. Gradually whisk in the milk. Bring to a simmer, stirring constantly, until the sauce thickens. Reduce the heat to low and simmer 5 minutes.
  8. Remove from the heat and stir in 1 cup Cheddar cheese and 1 cup American cheese. Taste. Add salt, pepper and hot sauce, to taste.
  9. Combine the remaining cheddar and American cheeses.
  10. Spread 1/3 of the cooked pasta over the bottom of the casserole dish.
  11. Top with 1/2 of the shredded Cheddar and American cheese mixture.
  12. Top that with 1/3 of the cheese sauce.
  13. Repeat, using another 1/3 of the pasta with the remaining cheese and 1/2 of the sauce.
  14. Finish with the remaining pasta and sauce.
  15. Sprinkle Parmesan cheese over the top.
  16. Bake until bubbly and golden brown over the edges, about 30 minutes.
  17. Serve hot.
