Cheesecake Factory's Key Lime Cheesecake Recipe

Ingredients


Crust
  • 1 2/3 cups Graham Cracker Crumbs
  • 1/4 cup Sugar
  • 1/4 cup Butter, melted
Filling
  • 1 1/4 pounds Cream Cheese, softened
  • 3/4 cup Sugar
  • 3 Eggs
  • 1 cup Sour Cream
  • 3 tablespoons All-Purpose Flour
  • 3/4 cup Key Lime Juice
  • 1 teaspoon Vanilla Extract
  • 1 - 2 drops Green Food Coloring, optional
  • Whipped Cream, for topping
Instructions

Crust
  1. Combine crumbs, sugar and butter in a bowl and mix well.
  2. Press the mixture into the bottom and 1/2 inch up the sides of a buttered 9 or 10-inch springform pan.
  3. Bake at 350°F for 10 minutes or until golden.
  4. Transfer the pan to a rack and cool.
Filling
  1. While the crust is cooking, in a large bowl combine the cream cheese and sugar.
  2. Mix at medium speed with an electric mixer until well blended.
  3. Add eggs, one at a time, mixing well after each addition.
  4. Blend in sour cream, flour, lime juice, vanilla and green food coloring.
  5. Pour mixture into cooled crust.
  6. Bake the cheesecake in the 350°F oven for about 15 minutes. Reduce the oven to 250°F and bake for 50 - 55 minutes longer, or until center is barely set.
  7. Remove the cheesecake and cool on a rack.
  8. Once cooled, chill it, covered, overnight.
  9. Using a knife loosen cake from rim of pan. Remove the cheesecake from the pan and transfer it to a cake stand.
