Buca di Beppo Shrimp Fra Diavolo Recipe

Ingredients
  • 1 pound large Shrimp, peeled, deveined and tails removed
  • 1 teaspoon Salt
  • 1 teaspoon dried Crushed Red Pepper Flakes
  • 4 - 5 tablespoons Olive Oil, divided
  • 1 medium Onion, sliced
  • One 14 1/2-ounce can Diced Tomatoes
  • 1 cup Dry White Wine
  • 3 cloves Garlic, chopped
  • 1/4 teaspoon dried Oregano
  • 3 tablespoons fresh Italian Parsley, chopped
  • 3 tablespoons fresh Basil, chopped
  • Freshly ground Black Pepper, to taste
  • 1 pound Pasta, of choice
Instructions
  1. Prepare pasta according to package directions. Drain. Set aside.
  2. Place shrimp in a medium bowl, Add salt and red pepper flakes. Toss to coat shrimp evenly.
  3. Pour 3 tablespoons oil into a heavy large skillet. Place over medium-high heat.
  4. When oil is hot and shimmering, add shrimp. Sauté for about a minute. Toss and continue cooking until just cooked through, about 1 to 2 minutes. Transfer shrimp to a large plate. Set aside.
  5. Add prepared onion to the same skillet. Add 1 to 2 teaspoons of olive oil to the pan, if necessary. Sauté until translucent, about 5 minutes.
  6. Add tomatoes with their juices, wine, garlic and oregano. Simmer until the sauce thickens slightly, about 10 minutes.
  7. Return prepared shrimp to the tomato mixture. Toss to coat. Cook for about 1 minute so the flavors meld together.
  8. Stir in parsley and basil.
  9. Taste. Add more salt and black pepper, to taste, if needed.
  10. Serve over prepared hot pasta.
