Ingredients
Honey Oriental Dressing
- 6 tablespoons Honey
- 3 tablespoons Rice Wine Vinegar
- 1/2 cup Mayonnaise (Duke’s is all we ever use)
- 2 teaspoon2 Dijon Mustard
- 1/4 teaspoon Sesame Oil
- 1/2 cup All-Purpose Flour
- 3/4 teaspoon Salt
- 1/2 teaspoon Pepper
- 2 large Eggs
- 1 cup Cornflakes, finely crushed (measure after crushing)
- 2 teaspoons dried Parsley
- 1 teaspoon Garlic Powder
- 1 teaspoon dried Dill
- 1 1/2 pounds boneless, skinless Chicken Tenders (about 20 tenders)
- Romaine Lettuce, chopped
- Red Cabbage, shredded
- Napa Cabbage, shredded
- 1 Carrot, julienned or shredded
- Several Green Onions, sliced
- Chow Mein Noodles
- Toasted Sliced Almonds
Instructions
Honey Oriental Dressing
- Place all ingredients in a small bowl and mix well with a hand blender.
- Refrigerate while you prepare the salad.
- Preheat oven to 400°F.
- Cover a baking sheet with aluminum foil and spray lightly with cooking spray.
- Place flour in a small bowl and season with 1/4 teaspoon each salt and pepper.
- Place eggs in a second bowl and whisk slightly.
- In a third bowl, mix cornflakes with parsley, garlic, dill, the remaining 1/2 teaspoon salt and the remaining 1/4 teaspoon of pepper.
- Dredge chicken in flour to coat.
- Shake off excess flour and dip into eggs.
- Shake off excess and dip into cornflake mixture. Roll it around to make sure the entire surface is coated.
- Arrange on prepared baking sheet.
- Bake for 12 to 15 minutes or until golden brown and chicken is cooked through. Flip once during cooking.
- Cut into bite sized pieces and keep warm.
- In a large bowl, toss the romaine, red cabbage, Napa cabbage, carrot and green onions.
- Portion out salads into individual serving bowls.
- Sprinkle almonds and chow mein noodles over top of each salad.
- Place bite-sized chicken pieces onto each salad forming a pile in the middle.
- Serve with Honey Oriental Dressing on the side.
