1 Pound Imitation Crab Meat, shredded
1 cup diced Celery
1/2 cup Mayonnaise
1/4 cup sliced Green Onions (including the green part)
1 tablespoon Lemon Juice
3 hard boiled Eggs, chopped roughly
1. Mix all ingredients.
2. Refrigerate for about an hour to allow flavors to blend.
Serve as either a salad on lettuce or on split croissants.
