Applebee's Oriental Chicken Salad Recipe

Ingredients

Honey Oriental Dressing
  • 6 tablespoons Honey
  • 3 tablespoons Rice Wine Vinegar
  • 1/2 cup Mayonnaise (Duke’s is all we ever use)
  • 2 teaspoon2 Dijon Mustard
  • 1/4 teaspoon Sesame Oil
Chicken
  • 1/2 cup All-Purpose Flour
  • 3/4 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 2 large Eggs
  • 1 cup Cornflakes, finely crushed (measure after crushing)
  • 2 teaspoons dried Parsley
  • 1 teaspoon Garlic Powder
  • 1 teaspoon dried Dill
  • 1 1/2 pounds boneless, skinless Chicken Tenders (about 20 tenders)
Salad
  • Romaine Lettuce, chopped
  • Red Cabbage, shredded
  • Napa Cabbage, shredded
  • 1 Carrot, julienned or shredded
  • Several Green Onions, sliced
  • Chow Mein Noodles
  • Toasted Sliced Almonds

Instructions

Honey Oriental Dressing
  1. Place all ingredients in a small bowl and mix well with a hand blender.
  2. Refrigerate while you prepare the salad.
Chicken
  1. Preheat oven to 400°F.
  2. Cover a baking sheet with aluminum foil and spray lightly with cooking spray.
  3. Place flour in a small bowl and season with 1/4 teaspoon each salt and pepper.
  4. Place eggs in a second bowl and whisk slightly.
  5. In a third bowl, mix cornflakes with parsley, garlic, dill, the remaining 1/2 teaspoon salt and the remaining 1/4 teaspoon of pepper.
  6. Dredge chicken in flour to coat.
  7. Shake off excess flour and dip into eggs.
  8. Shake off excess and dip into cornflake mixture. Roll it around to make sure the entire surface is coated.
  9. Arrange on prepared baking sheet.
  10. Bake for 12 to 15 minutes or until golden brown and chicken is cooked through. Flip once during cooking.
  11. Cut into bite sized pieces and keep warm.
Salad
  1. In a large bowl, toss the romaine, red cabbage, Napa cabbage, carrot and green onions.
  2. Portion out salads into individual serving bowls.
  3. Sprinkle almonds and chow mein noodles over top of each salad.
  4. Place bite-sized chicken pieces onto each salad forming a pile in the middle.
  5. Serve with Honey Oriental Dressing on the side.
