Applebee's Tequila Lime Chicken Recipe

Ingredients
  1. One 5-ounce boneless, skinless Chicken Breast
  2. 1/2 cup freshly squeezed Lime Juice
  3. 1/4 cup Tequila (non-alcoholic may be used)
  4. 1/2 cup Tortilla Chips
  5. 1/4 cup Applebee's Mexi-Ranch Dressing (See Recipe in Box Below)
  6. 1/4 cup shredded Cheddar Jack Cheese

Instructions
  1. Prepare Applebee's Mexi-Ranch Dressing according to the recipe in box below. Set aside (Can be done in advance. Store in a tightly sealed container, in the refrigerator, until ready to serve. Bring up to room temperature before using.)

To Prepare Chicken
  1. Pour lime juice and tequila into a sealable plastic bag.
  2. Place chicken in bag and chill.
  3. Marinate chicken overnight.
  4. Remove chicken from marinade and grill over medium heat 10 minutes or until thoroughly cooked.

To Assemble

  1. Set oven to broil.
  2. Scatter tortilla chips on an oven-safe plate.
  3. Place chicken on top of tortilla chips.
  4. Pour Mexi-ranch dressing over chicken.
  5. Cover with the shredded Cheddar jack cheese.
  6. Place chicken under the broiler until cheese is melted. Be careful, plate will be hot!
  7. Serve Applebee's Tequila Lime Chicken with Pico de Gallo and Spanish rice on the side.
   

Applebee's Mexi-Ranch Dressing Recipe


Ingredients
  • 1 tablespoon Salsa
  • 3 tablespoons Ranch Dressing

Instructions
  1. Place both ingredients in a small bowl and mix well.  
Can be made in advance. Store in a tightly sealed container, in the refrigerator, until ready to serve. Bring up to room temperature before using.
